That manufactured need to talk is the whole trick. Speaking practice usually dies of nothing-to-say; an information gap gives every utterance a purpose.

Common questions
How do I stop students just peeking at each other's sheets?
Sit them facing each other, sheets flat, or back to back for the full telephone effect. Peeking defeats the purpose, and most classes accept the no-peeking rule as part of the game once it is framed as one.
What content makes a good gap task?
Anything with clean facts to exchange: timetables, prices, character profiles, a short biography. The best tasks force the exact question forms you are teaching, "what time", "how much", "where was she born".
